Pumpkin Chocolate Chip Muffins


What You Need
1 cup flour
1/2 cup sugar 
1/4 teaspoon baking soda
1/8 teaspoon salt
2 tablespoons brown sugar
4-6 tablespoons applesauce or other puree
1/4-1/3 cup pumpkin
1/4 cup egg substitute    
1 teaspoon vanilla extract    
chocolate chips, as desired

What You Do
~ Preheat oven to 375 degrees F. In a mixing bowl, combine all dry ingredients except for the chocolate chips, Mix well.  

~ In a separate bowl, mix together all wet ingredients (puree, pumpkin, egg substitute, and vanilla extract). Add this mixture to the dry ingredients, and stir until completely blended. 

~ Then, fold in the chocolate chips. Spoon batter into muffin tins or cups. Place in the oven for about 15-20 minutes (until they appear done and feel firm). For best results, enjoy while they are still warm and the chips are still melty!

Pumpkin Oatmeal Muffins


What You Need

1 1/2 cups all-purpose flour
1 cup quick oats
3/4 cup firmly packed brown sugar
1/2 cup raisins (optional)
1 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp pumpkin pie spice
1 cup canned pumpkin
3/4 cup fat-free milk*
1/3 cup canola oil
1 egg lightly beaten, or 2 egg whites*

What You Do

~ Preheat oven to 400 degrees and line a 12-cup muffin tin with paper cases. Combine dry ingredients in a large bowl. In a medium bowl, combine the pumpkin, milk, oil and egg(s), blending well. Stir pumpkin mixture into dry ingredients until the dry ingredients are just moist. Fill muffin cases evenly and bake for 22-25 minutes.

* These ingredients can be substituted with soy milk and applesauce (or other egg replacer) to make a vegan muffin

Pumpkin Chocolate Swirl Muffins


What You Need

Pumpkin Muffin Batter
1 cup sugar
1 1/2 cups all-purpose flour
15 oz can pumpkin
1/3 cup vegetable oil
2 large eggs
1/2 teaspoon ground cinnamon
1/4 teaspoons ground ginger
1/8 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Chocolate Muffin Batter
1 cup all-purpose flour
6 tablespoons unsweetened cocoa powder
1 cup sugar
2 eggs
2/3 cup milk
2/3 cup butter, softened
1 1/2 teaspoons baking powder
1/2 tsp baking soda
1 teaspoon vanilla
1/4 tsp salt

What You Do
~ Preheat your oven to 350 degrees.

~ Place the pumpkin, oil, eggs, pumpkin pie spice, sugar, baking soda, and salt in the bowl of your mixer and mix on medium until smooth, then turn your mixer to low and mix in the flour until just combined.  Then place the mixture into a large bowl.

~ Clean the mixer bowl and then place the sugar, eggs, baking poweder, vanilla, milk and butter into the bowl.  Mix on medium/low until smooth.  Then turn the mixer to low and mix in the flour and cocoa powder.

Pumpkin Muffins


What You Need
2 1/4 cups all-purpose flour (about 10 ounces)
2 teaspoons pumpkin pie spice
1 1/2 teaspoons baking soda
1 teaspoon ground ginger
1/4 teaspoon salt
1 cup golden raisins (optional)
1 cup packed brown sugar
1 cup canned pumpkin
1/3 cup buttermilk
1/3 cup canola oil
1/4 cup molasses
1 teaspoon vanilla extract
2 large eggs
Cooking spray
2 tablespoons granulated sugar

What You Do
~ Preheat oven to 400°

~ Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, pumpkin pie spice, baking soda, ginger, and salt in a medium bowl, stirring well with a whisk. Stir in raisins; make a well in center of mixture. Combine brown sugar, canned pumpkin, buttermilk, canola oil, molasses, vanilla extract, and eggs, stirring well with a whisk. Add sugar mixture to flour mixture; stir just until moist.

~ Spoon batter into 18 muffin cups coated with cooking spray. Sprinkle with granulated sugar. Bake at 400° for 15 minutes or until a wooden pick inserted in center comes out clean. Remove muffins from pans immediately; cool on a wire rack.
