In honor of Cinco de Mayo, I would like to share one of my favorite recipes from the cookbook La Dolce Vegan: Vegan Livin' Made Easy by Sarah Kramer. It's very simple to throw together and is a real crowd pleaser!
What You Need
1 medium tomato, chopped
1 avocado, cubed
1/4 cup cilantro, minced
1 green onion stalk, minced
1 tablespoon oil (e.g. flax, hemp, olive)
2 teaspoons fresh lime juice
tortilla chips (I recommend Tostitos Multigrain Tortilla Chips)
What You Do
Toss all the ingredients into a bowl and mix. Refrigerate until ready to be eaten or can be served immediately.
What you should know:
Avocados are high in valuable, health-promoting fats. For a typical avocado:
~ About 75% of an avocado's calories come from fat, most of which is monounsaturated fat.
~ Avocados also have 60% more potassium than bananas. They are rich in B vitamins, as well as vitamin E and vitamin K.
~ Avocados have a high fiber content among fruits – including 75% insoluble and 25% soluble fiber.
~ High avocado intake has been shown to have a beneficial effect on blood serum cholesterol levels.
