I have to be honest (as you're about to read), I didn't make it from scratch due to a time crunch but it still turned out pretty well. Please note that if you plan to make this, it is a slightly heavier cake.<br />

Mine is obviously a little different because it's vegan and it's not made in the crockpot. As soon as I saw the pin for this, I wanted to try to veganize it but I'm not one to plan meals in advance and remember to put them in the crockpot (even though I now own 2 of them). So, the other night my husband and I stopped at the grocery store for the ingredients we didn't have at home and I made up my own (though slightly similar) version.</span><br />

</span></div><div class="separator" style="clear: both; text-align: -webkit-auto;"><span style="font-family: inherit; font-size: large;">Serve with any (or all) of the following:</span></div><div class="separator" style="clear: both; text-align: -webkit-auto;"><span style="font-family: inherit; font-size: large;">white rice</span></div><div class="separator" style="clear: both; text-align: -webkit-auto;"><span style="font-family: inherit; font-size: large;">salsa</span></div><div class="separator" style="clear: both; text-align: -webkit-auto;"><span style="font-family: inherit; font-size: large;">tortillas</span></div><br />
<span style="font-family: inherit; font-size: x-large;"><b>What You Do</b></span><br />
<br />
<span style="font-family: inherit; font-size: large;">~ Place chik'n, olive oil and 1-2 tbs taco seasoning in a large frying pan and saute until slightly browned.</span><br />
<span style="font-family: inherit; font-size: large;"><br />
</span><br />
<span style="font-family: inherit; font-size: large;">~ Meanwhile, combine remaining taco seasoning, corn, black beans, rotel and cream cheese in a medium-large pot or saucepan.</span><br />
<span style="font-family: inherit; font-size: large;"><br />
</span><br />
<span style="font-family: inherit; font-size: large;">~ Cover and cook on medium-low until cream cheese is melted and it resembles a thick soup (about 10-15 minutes), stirring 2-3 times.</span><br />
<span style="font-family: inherit; font-size: large;"><br />
</span><br />
<span style="font-family: inherit; font-size: large;">~ Stir in chik'n, replace lid and continue to cook for another 15-20 </span><br />
<span style="font-family: inherit; font-size: large;">minutes.</span><br />
<span style="font-family: inherit; font-size: large;"><br />
</span><br />
<span style="font-family: inherit; font-size: large;">~ Stir one final time and serve over rice and/or in tortillas and top with salsa.</span><br />

<span style="font-family: inherit; font-size: large;">~ Drop by heaping teaspoonfuls onto a baking sheet lined with parchment paper (about 2 inches apart), and flatten slightly.</span><br />
<span style="font-family: inherit; font-size: large;">~ Bake for 9-11 minutes, or until the edges are golden brown. Let sit on the baking sheet for about a minute before transferring to a wire rack to cool completely.</span><br />

Despite the heat and lack of members in attendance, fun was had by all. We spent a little time reading over the minutes from past reunions (all the way back to 1933) and learned that our ancestors used to make (yes make) ice cream at the gathering each year. This brings me to today's topic.</span></span></div><span class="Apple-style-span" style="color: #333333; font-family: inherit; font-size: large;"></span><br />
<div style="margin: 0in;"><span class="Apple-style-span" style="color: #333333;"><span style="color: black; font-family: inherit;"><span class="Apple-style-span" style="font-size: large;">Last night, after all of our family had returned home, my husband decided he wanted to make some ice cream the "old-fashioned" way. Now I remember making ice cream with my grandparents as a kid and it seemed like it took forever for it to be finished. So of course I wasn't really excited at first because when it comes to ice cream, I'm not a very patient person. However, I still accompanied my husband to the store to buy an ice cream freezer and all the supplies he needed. To get to the point, we ended up having some really delicious vegan ice cream and I wanted to share the basic recipe with you.</span></span></span></div><div class="MsoNormal"><span class="Apple-style-span" style="color: #333333; font-family: "Trebuchet MS", sans-serif;"><br />

Yesterday I worked until 8:30pm and when I got home, my husband was complaining that he was hungry (maybe he forgot how the stove works). I have to admit, it’s been awhile since I went grocery shopping so we didn’t have much in the house. I decided to throw some seitan and veggies in a pan and cook some pasta. Now I know he’s getting tired of tomato-based pasta sauces so I decided to try something new. After throwing some things together, I came up with the recipe below. I wasn’t planning on eating anything that late at night but after trying the sauce, I gave in and had some with pasta and mushrooms. Try it and see what you think!</span><o:p></o:p></span></div><div class="MsoNormal"><br />

<span class="Apple-style-span" style="font-family: inherit; font-size: large;">1 cup mixed berries (your choice but I used strawberries, raspberries, blackberries and blueberries)</span><br />
<span class="Apple-style-span" style="font-family: inherit; font-size: large;">1 cup soy milk</span><br />
<span class="Apple-style-span" style="font-family: inherit; font-size: large;">1 tbsp vanilla extract</span><br />
<span class="Apple-style-span" style="font-family: inherit; font-size: large;">1/3 cup sugar</span><br />
<span class="Apple-style-span" style="font-family: inherit; font-size: large;">3 tbsp cornstarch</span><br />
<span class="Apple-style-span" style="font-family: inherit; font-size: large;">1/8 tsp salt</span><br />
<span class="Apple-style-span" style="font-family: inherit; font-size: large;">1 pie crust</span><br />
<br />
<strong><span class="Apple-style-span" style="font-family: inherit; font-size: x-large;">What You Do</span></strong><br />
<strong><span style="font-family: Verdana, sans-serif;"><br />
</span></strong><br />
<span class="Apple-style-span" style="font-family: inherit; font-size: large;">~ Bake pie crust according to directions. Set aside to cool while making the filling.</span><br />
<span class="Apple-style-span" style="font-family: inherit; font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-family: inherit; font-size: large;">~ In a food processor (I used a blender), mix together the fruit, milk and vanilla until smooth and set aside.</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">~ In a medium saucepan, stir together sugar, cornstarch and salt.</span><br />
<span class="Apple-style-span" style="font-family: inherit; font-size: large;">Whisk in a 1/4 cup of the berry/milk mixture to make a paste. </span><br />
<span class="Apple-style-span" style="font-family: inherit; font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-family: inherit; font-size: large;">~ Stir in the remaining berry/milk mixture and bring to a boil, stirring constantly. When I say stir constantly, I mean don't leave the pan for even 30 seconds because the mixture will burn very quickly.</span><br />
<span class="Apple-style-span" style="font-family: inherit; font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-family: inherit; font-size: large;">~ Reduce heat and simmer for 1 minute or until the pudding starts to thicken. </span><br />
<span class="Apple-style-span" style="font-family: inherit; font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-family: inherit; font-size: large;">~ Pour into cooled pie crust, cover with plastic wrap and refrigerate for at least 2 hours before serving. </span><br />
